Dear Friends, I must confess that since I’ve lived in Palermo I’ve done nothing but eat fish. Personally I go and buy it from Andrea at the Vucciria, who kindly provides me with the fish and its recipe.
In short, today is sea bream day. I had it cut into fillets to be able to cook it in a pan (around 800gr).
Ingredients:
- Sea bream
- Garlic
- Cheery tomatoes
- Parsley
- Wine (optional)
- Chillies (optional)
Brown the garlic in a bit of olive oil, cut the tomatoes and add them to the pan with a pinch of salt. Cook for a few minutes, add parsley and 1 cup of water. Bring to a boil, add the fillets of sea bream and leave them to cook. A pinch of salt and bring it to the table!
If the fish is not for the children, add white wine to the cherry tomatoes and a final sprinkling of chilli!
