Vuggiolo with the green eyes

Dear Friends, the other day Andrea advised me to try this fish. He told me: “try it, it’s a local white fish that’s not easy to find, sweeter than sole.” So you can’t not try it, right? Then he tells you that you can only cook it fried, and do you think twice? Absolutely not!

I realise that it’s not a nice fish to look at, but it’s really good! First I washed it, passed it in flour and then fried it in boiling sunflower oil. To be consumed that same day, try it!
