Dear Friends, if I remember correctly I learned this recipe in Puglia. Totally mesmerising, super good!
Ingredients for the seasoning:
- Olive oil
- Savoury baked ricotta
Cut the zucchini into small rounds. Fry the garlic in a pan with a little olive oil. I recommend tilting the pan slightly so that the garlic can cook evenly. Add the zucchini, let it brown and add a bit of cooking water from the pasta. Add the cooked pasta to the pan and sprinkle with salted ricotta in abundance. Bon appètit!
