To prepare this marvellous pasta you will need:
- 1 onion (possibly white)
- 1 long zucchini (of the tenerumi plant)
- 4 mature tomatoes,
- salt and extra virgin olive oil.
Take the onion, cut it into small pieces and place it in a pan with a little water. As soon as it’s wilted, add a bit of oil and let it simmer till brown. Meanwhile, wash the zucchini, cut it into small pieces and remove the peel from the tomatoes.
When the onion is well browned, add the zucchini, tomatoes, a little salt and cook over high heat for three minutes. Add two cups of water and cook everything on low heat. As soon as the zucchini is soft, the condiment is ready.
I usually, since my children don’t like vegetables very much, whisk everything and then freeze it in mini glass jars to be defrosted when necessary.
