- 300 gr butter (softened, leave out the fridge for an hour)
- 310 gr sugar (280 gr + 30 gr)
- 5 eggs
- 370 gr flour “00”
- 15 gr baking powder
- 70 gr whole milk
- 30 gr cocoa powder
- 2 gr salt
- Half of a vanilla bean
This Plumcake is easily prepared with a blender or else you can use a classic electric whisk or a planetary mixer equipped with a whisk. The procedure is quite fast.
Start by whisking for about 2 minutes the butter with 280 grams of sugar and add one egg at a time, alternating with a tablespoon of flour together with the baking powder. Finally add 40 gr of whole milk (of the 70 gr total), vanilla and salt. Pour half of the mixture into the mold.
To the remaining half of the batter, add the cocoa, the last 30 grams of sugar and 30 gr of whole milk, mix together and pour on top of the vanilla mixture.
Cooking time: 170°C for 45/50 minutes
If you want, you can add 30/40 gr of chocolate chips or small pieces of dark chocolate to the cocoa part.
