Jerusalem artichoke purée

Dear Friends, the Jerusalem artichoke – also known as Topinambur or American potato – is a tuber full of benefits. Rich in vitamins and minerals, it’s suitable for diabetic diets, fights tiredness and stress, ideal against constipation, detoxifying, regulates bad cholesterol and is gluten-free. Truly ideal! The best way to preserve its beneficial properties is to eat it raw, but for children it is better to prepare a Jerusalem artichoke purée.

Ingredients for 1 person:

  • 150 gr of Jerusalem artichokes (easily found in organic shops)
  • 75 gr of potatoes
  • 2 washed bay leaves
  • 300 ml of water
  • 3 teaspoons of ricotta
  • For adults add:
  • 1 piece of ginger
  • 1 shallot
  • Bottarga, shrimp or sausage

Peel the Jerusalem artichoke and potato, wash them and cut them into small pieces. Put everything into a pot with water, the bay leaves and cook over low heat for about 30 minutes. When ready, crush the Jerusalem artichokes and potatoes with a fork until you get a puree. Pour into a bowl, add the ricotta and mix.

If the puree is for adults only, we can add a shallot and ginger during cooking. Complete the dish, instead of ricotta, with a sprinkling of bottarga or sautéed shrimp or sausage. Bon appétit!
