Future engineers, or simply those with a sweet-tooth, this is the recipe for you!
For the gingerbread:
- 700 gr of 00 flour
- 200 g of butter
- 200 gr of sugar
- 200 gr of honey
- 1 egg
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 3-4 tablespoons of cocoa
- For the Icing:
1 egg white
- 300 grams of sugar
- 4-5 tablespoons of lemon juice
For the decorations:
- Colourful candies
- Grated coconut
First, draw on a piece of cardboard all the elements of the house: 2 rectangles 13 x 20 cm that will form the roof; two irregular pentagons that will form the facade and the back, which should be 11.5 cm for the base line, 4.5 cm in height for the two shorter sides and 11 cm for the remaining two (the upper part of the façade where the roof rests); then 2 rectangles of 13.5 x 5 cm for the sides.
Now we prepare the dough. Pour all the ingredients on a clean surface and mix while adding milk when necessary to create a smooth and rather firm dough. Leave to rest for two / three hours in the fridge wrapped in cling film.
After three hours, knead the dough again, and roll it out to around half a cm thick on a floured surface.
Place the cardboard shapes on the dough and cut out the pieces of the house, also cut out the door of the cottage on the side of the facade. Transfer the pieces onto a baking pan covered with parchment paper and bake at 200°C for 10 minutes.
As soon as the pieces are done, make 2 holes on each roof shape about 1cm from the edge and 3cm on the opposite side, let it cool and then tie them together at right angles using a red ribbon.
Now we prepare a very thick glaze: whip the egg white with an electric whisk and add 300 gr of icing sugar, or more if necessary. When the glaze is very thick, flavour it with a tablespoons of lemon juice.
Now let’s assemble the cottage. Use a 40 cm diameter cardboard disc for the base and with the glaze begin to build the walls by spreading the frosting on the sides and leaning the shapes against each other, checking that there is enough to cement it all. Insert the semi-open small door and let it all dry.
Meanwhile, brush the roof with frosting and glue on all the coloured candy, then very gently place the roof on top of the walls of the house.
Naturally, you can use your imagination and embellish the exterior, and in the end sprinkle with grated coconut for a snowy effect.
