Gingerbread Cookies

Dear Friends, Christmas is officially next week! Gingerbread, typically a Northern European treat, is one of the traditional pleasures of the season. Usually flavoured with ginger, cloves, nutmeg or cinnamon and sweetened with honey, sugar or molasses, this recipe is much more simple, super-quick, and makes a lovely soft-type of gingerbread that you can try with your kids.


  • 350g flour
  • 1tsp ginger
  • 1/2 teaspoon cinnamon
  • 1 tsp bicarbonate of soda
  • 100g butter
  • 175g soft brown sugar
  • 4 tbsp golden syrup (like Maple Syrup)
  • 1 egg

For the icing:

  • 100 gr icing-sugar
  • 2 tsp water/ milk

Add the flour, ginger, cinnamon and bicarbonate into a bowl and stir until perfectly combined. Add the soft butter and mix with your fingertips until it resembles breadcrumbs. Then add the sugar, syrup and egg and mix until it becomes a soft dough. Knead into a ball, wrap in cling-wrap and place in the fridge for 30 minutes. When this time has passed, roll-out the dough on a floured surface and cut into shapes approx 1cm thick. Place on a baking tray and cook at 180°C degrees for 10-12 minutes. When completely cool, decorate with an icing-sugar and warm water/ milk mixture. Share with your friends!
