Fish Soup

Dear Friends, I love this recipe because it’s good, cheap, and it can always be different. When I think about making fish soup, I go to Andrea and ask him for a variety of small fish. For example today I found shard, snapper, mullet, basically I go for whatever appeals to me and what he recommends.


  • Selection of small fish for 2 people
  • 5 red tomatoes
  • 1 carrot
  • 1 onion
  • parsley
  • Salt to taste
  • Extra virgin olive oil
  • Spaghetti broken up into peices
  • Wine (optional)
  • Chillies (optional)

Brown the onion and carrot in a little olive oil, and add the peeled tomatoes cut into small cubes. Add the parsley and let the vegetables cook. Add 6/7 cups of water, bring to a boil and add salt (there must be enough water to cover the fish). Rinse the fish and add it to the pot. After about 10 minutes remove the fish and pick out the bones, putting only the pulp back into the pot (I know this process is gruelling, but it’s really worth it). Cook over low heat for another 45 mins. Finally, add the pasta, I recommend not too much. Bon appétit!

If this dish is not for children, add white wine to the tomatoes and a final sprinkling of chilli!
