Centenarian Zucchini

Dear Friends, I personally discovered the centenarian zucchini (also known as Chayote or courgette) when I arrived in Palermo. Rich in vitamin C, B9 and folic acid (perfect for pregnant women), it has anti-inflammatory, diuretic and hypotensive properties. It has the consistency of an apple and it’s tempting to bite! Usually you eat it fried or boiled, but I used it to prepare a minestrone.

Ingredients for 1 person:

  • 100 gr centenarian zucchini
  • 1/2 green apple
  • 70 gr pumpkin
  • 2 bay leaves
  • Parmesan cheese to taste
  • Water
  • Pastina

Take out the central part of the apple and zucchini. Peel and wash the apple, the pumpkin and the zucchini and grate them coarsely in a saucepan with water. Bring to a boil, add the bay leaves and cook for 10 minutes. Once cooked, remove the bay leaves and add the small pasta. Complete with a generous sprinkling of Parmesan cheese! Bon appétit!
